Healthy dinner recipes - Moroccan veggie tagine

This is a delicious North African dish full of Moroccan flavour in harmony with protein packed chick peas, veg and delicately flavoured couscous. This is a really simple dinner that will become a great addition to your regular repertoire. It's so simple and takes about 45 minutes in total.

Ingredients:

For two servings (four servings in brackets)

150g (300) Whole-meal Couscous
2 (3) red onions
1 (1) lemon
20g (40) honey
1 (2) Courgettes
13g (25) coriander
50g (100) raisins
3 (6) tsp Ras-el-Hanout
½ (1) stock cube
1 can chopped tomatoes
1 (2) can chick peas
300g (600) sweet potatoes
1 (2) red pepper
2 (4) cloves garlic

Method:

  1. Line up equipment
  • 1 large saucepan
  • 1 large mixing bowl
  • Fill and boil kettle
  • Garlic crusher (not essential)
  1. Extra ingredients
  • Salt and pepper to taste
  1. Prepare your veg and flavourings
  • Roughly chop the red onions
  • Finely chop or crush the garlic
  • Dice the sweet potatoes , roughly 2cm cubes (peeled or unpeeled depending on preference)
  • Dice the courgette(s)
  • Dice the red pepper
  • Roughly chop the coriander
  • Zest half the lemon and juice the whole of it
  1. Make the tagine
  • In a large saucepan on a medium heat, fry the 2/3 of the red onion and all of the garlic in a little oil of your choosing for a couple of minutes
  • Add the sweet potato, courgettes, red pepper and ¼ cup of boiling water. (1/2 cup for 4 persons).
  • Add chopped tomatoes
  • Add chick peas (drained)
  • Add half of stock cube – keep the rest for the couscous
  • Add half the raisins
  • Add half Ras el Hanout spice
  • Season with salt and pepper to your liking.
  • Bring to simmer and cover
  1. Make the couscous
  • Add remaining red onion to a large bowl or saucepan
  • Add lemon zest and juice
  • Add honey
  • Add half the coriander
  • Add remaining Ras el Hanout
  • Add remaining raisins
  • Add remaining stock cube
  • Add couscous
  • Add 225ml (450ml for 4 person box) boiling water
  • Cover and set aside.
  1. Check the tagine
  • The tagine needs around 25-30 minutes. If the sweet potatoes are cooked through its ready.
  • Take of heat and stir in remaining coriander.
  1. Build your dish
  • Serve tagine in a bowl over bed of couscous. Enjoy!
