Healthy recipe - Huevas Rancheros (Mexican Rancher’s Eggs) with spiced brown rice


This is a delicious Mexican inspired breakfast but we love it served with spiced rice for a comforting healthy dinner that the whole family will love. There is a punchy smoked chilli paste we use here from Gran Luchito, it adds loads of flavour. If you can't get your hands on it, add a little chilli instead to taste. 

This dinner recipe takes about 45 minutes in total but about 20 minutes of that is letting the sauce cook down. Give it a try and let us know what you think!

Huevas rancheros mexican ranchers eggs made with smoked chilli paste from gran luchito

Ingredients for 2 people (4 people in brackets)

2 Eggs (4)
1 can chopped tomato (2)
1 red pepper (+1 yellow)
2 medium tomatoes (4)
1 clove garlic (2)
1 medium onion (1 large)
½ tsp Gran Luchito paste (1)
½ tsp smoked paprika (1)
50g mature cheddar (100g)
1 bay leaf (2)
10g Coriander (20g)
150g brown rice (300g)

Spice blend:
1 tsp cumin (2)
1 pinch chilli (1/2 tsp)
1 tsp oregano (2)
½ tsp paprika (1)

 

METHOD: **It’s best to read through fully before starting**

  1. Line up equipment
  • Fill and boil kettle
  • One saucepan
  • One frying pan (large one for 4 persons)
  • Grill
  1. Prep your flavours
  • Finely chop or mince the garlic
  • Roughly chop the onion
  • Remove leaves from coriander and finely chop the stalks
  • Grate the cheese
  • De-seed and slice the pepper(s) into lengths
  • Chop the fresh tomatoes
  1. Get your Rancheros sauce going
  • In your frying pan heat a little oil and fry of the onion and garlic for 5 minutes or so
  • Add the tin(s) chopped tomatoes and the fresh tomatoes
  • Add the chopped coriander stalks
  • Add the bay leaf, smoked paprika and Gran Luchito smoked chilli paste
  • Add the peppers
  • Bring to a simmer and cover the pan
  • Taste and season with salt and pepper to your liking
  • Set timer for 20 minutes
  1. Get the rice on
  • 2 parts boiling water to one part rice
  • Bring to a gentle simmer
  • Add spice blend
  • Cover
  • Check during cooking, you may need to add more water
  • The rice needs 25 minutes
  1. Get the eggs on
  • In your Rancheros sauce make little wells with a spoon and crack an egg into each well
  • Cover and leave simmering for 4 minutes
  1. Get the grill on
  • Set your grill to medium high
  • After they’ve had 4 minutes remove the sauce and eggs from the hob – don’t worry if the eggs don’t look cooked – you’ll now be cooking them under the grill
  • Sprinkle the Huevas Rancheros with the grated cheese and place under the grill
  • Grill from 5 minutes until the cheese is bubbling nicely
  • Ideally you want your eggs to keep a runny centre
  1. Serve up
  • Top your Huevas Rancheros with coriander leaves
  • Serve on a bed of brown rice and enjoy!
